Braised Chicken with Mushroom, Olive and Basil, with Sweated Spinach top with Ricotta Cheese and Cold Salsa served with Pumpkin Pasta


- Presentation is very good.
- Combination is nice.
- Chicken is taste nice.
- Pasta is very nice.

*Chef also said that my dish can send to competition. ^^
These are the food prepared by my group members. ^^
We can see that we are keeping improve our cooking skill and skill of presentation.

Roasted Lamb with Roasted Zucchini, Saute Mushroom and Couscous Served with Yogurt Tomatoes Base Sauce

Comments from Chef:
- Presentation is good.
- Lamb is good.
- Couscous is good.

Comments from Myself:
- Presentation looks messy.
- Sauce is not stable.
- Meat is over cook.
- Seasoning is nice.
Presentation, couscouse should mold it stable, sauce should be thicken.
Green oil should blend more fine
and use squeeze bottle draw out the line.
Meat, overcooked, should check properly.

Duck Breast stuffed with Asparagus, with Braise Cabbage and Pilaf Rice served with Gastrique Sauce and Green Oil (06/05/2010)


- Rice was smashed.
- Rice was not in actual colour.
- Cabbage was last colour and should be julienne .
- Vegetable in rice should cut in small dice size.
- Doneness of the meat is ok.
- Presentation of the dish still can do more better.
